Polynesian Resort

Lapu Lapu
Quite possibly the most famous drink on all of Disney property! This delightful mix served in a hollowed-out pineapple does an excellent job of transporting you to the tropics!

  • 2 parts Myers's Dark Rum, 2 parts pineapple juice, 3 parts orange juice, 1 part sweet and sour mix, topped with 1 part Bacardi 151 rum floated on the top.


Tropical Macaw
This delicious tropical drink is supposed to layer, to mimic the macaw's beautiful red and green feathers. One too many and you might start seeing parrots...

  • Start with 1 part Parrot Bay coconut rum and 1 part Midori melon liqueur, then add ice to the top of the glass. Gently pour in 2 parts pineapple juice and 2 parts cranberry juice and serve. Unless the drinker wants all of the alcohol at the bottom they'll have to ruin the effect to distribute the rum. But, it was fun to look at while it lasted, right?


Backscratcher
Backscratcha! Ever wonder if there was anything more embarrassing than getting a drink with an umbrella in it, well, this tops it! A nearly 2ft long wooden backscracther comes sticking straight out of the glass. Tell those snickering across the bar that this is one potent concoction.

  • 1 part Bacardi Superior rum, 1 part Myers's Original Dark rum, 5 parts guava passion fruit juice mix, float a shot of Jack Daniels on top, throw a bamboo backscratcher in, and you're set!


Pina Colada
Pina Coladas might not be a unique drink, but the Tambu Lounge makes one of the best ones we've ever had. Not to mention it comes in an authentic tiki glass.

  • 1.5 parts rum, 3 parts pineapple juice, 2 parts creme de coconut (ie. Coco Lopez)
  • This is easiest to do in large batches, it's two 15oz cans of coco lopez to one 46 oz can of pineapple juice. Shake the coco lopez before you open the can so it'll pour out of the can and pour all three cans into a blender (no other measuring required!) and blend until smooth. Pour your mix into a pitcher for later use.
  • Now, make 'em to order, 3 parts mix from your pitcher to 1 part rum poured into a blender with ice and blend. It's the perfect pina colada every time. Your mix will last in the fridge for about three days but will need to be stirred before use if left to sit.


 **BONUS DRINK**

Zombie
Not part of Disney's menu, but it should be...and I couldn't figure out a better place to feature my favorite new tiki drink! This cocktail has a lot going on, among the sweet fruit juice found in most tiki drinks you'll also enjoy Falernum's warm clove, Pernod's delicate anise and Donn's well balanced cinnamon mix adding a lot of that "can't put my finger on it" great flavor. Of course, be careful, there's a reason they call them zombies.

The following is Jeff "Beachbum" Berry's recipe as published in Imbibe Magazine. It's allegedly Donn Beach's recipe from his famous restaurant The Beachcomber, the birthplace of the original Zombie.

1 1/2 oz. Jamaican rum
1 1/2 oz. gold Puerto Rican rum
1 oz. 151-proof Demerara rum (easy to find sub: Bacardi 151)
1/8 tsp. Herbsaint or Pernod
1/2 oz. falernum (Tough to find locally but available online)
1/2 oz. Donn’s Mix (see below)
1 tsp. grenadine
1 dash Angostura bitters
6 oz. crushed ice
Tools: blender
Glass: chimney
Garnish: mint sprig

Put everything in blender, saving ice for last. Blend at high speed for no more than 5 seconds. Pour into glass and add ice cubes to fill. Garnish.

 

Donn's Mix

3 cinnamon sticks, crushed
1 cup sugar
1 cup grapefruit juice

Create an infused simple syrup by heating cinnamon sticks, sugar and water. Bring to a boil, stirring until sugar is dissolved. Simmer for 2 minutes, then remove from heat and let sit for at least 2 hours before straining into a clean glass bottle. To finish making the mix, add 1 part of the syrup to 2 parts fresh grapefruit juice.

Simple Modifications

Budget Friendly Mod: Substitute Gold Rum for all three rums. This also makes it a drink you can enjoy all night as taking out the 151 overproof rum drastically reduces alcohol content. Of course, adding more rum could keep it budget friendly while maintaining much of the original recipe's punch.

Orange/Pineapple Mod: Swap a half cup of orange or pineapple juice for half of the grapefruit juice in Donn's Mix for a very different but still very delicious cocktail.

Easy Drinkin' Mod: If there's one complaint, it's the same one that many tiki drinks suffer from, it's a little sweet and a little syrupy. Cut the sweet syrup flavor with a few ounces of soda water or sprite.
